Caramel Crêpes à la Colby

Ingredients

  • 100g gluten-free plain flour
  • 100g gluten-free self-raising flour
  • 50g white sugar
  • 50g brown sugar
  • 30g Stevia
  • 1/3 cup lactose-free milk
  • 4 eggs
  • 1 tbsp white vinegar
  • 3 tblsp honey
  • 3/4 tbsp bi-carb of soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla essence

Method

  1. Whisk eggs, gradually adding sugars and Stevia, then honey.
  2. Whisk milk into to egg mixture.
  3. Add all remaining dry ingredients, continuing to mix as you go.
  4. Once well combined, add vinegar and vanilla essence and mix until just consistent.
  5. Allow to stand for at least 10 minutes.
  6. Cook / fry as desired.

Crêpes à la Jane

Ingredients

  • 180g plain flour
  • 150ml milk
  • 100g butter, melted
  • 100g sugar
  • 2 eggs, separated
  • 2 tbsp vinegar
  • 1/2 tbsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla essence?
  • pinch of salt

Method

  1. Whip egg whites and half sugar to soft peaks, then set aside.
  2. Mix egg yolks and remaining sugar, then combine milk and melted butter.
  3. Combine all dry ingredients in a medium mixing bowl until consistent.
  4. Add dry ingredients to liquid mixture from step 2 until just combined.
  5. Fold meringue into mixture.
  6. Allow to stand for at least 10 minutes.
  7. Cook / fry as desired.

Notes

  • 250g plain flour
  • 200ml milk
  • 100g butter, melted
  • 50g sugar
  • 2 eggs, separated
  • 1 tbsp baking powder
  • 1 tbsp vinegar
  • no cinnamon
  • no vanilla essence?
  • pinch of salt
  • 10 minutes rest

Was quite good. Not particularly fluffy, but texture was great. Could be sweeter.

Next time, add a little more sugar.

  • 2 eggs, separated
  • 1 tbsp vinegar
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla essence?
  • pinch of salt
  • 20 minutes rest

Also quite good. Perhaps too much cinnamon, and not enough baking powder.

Next time:

  • add a little more baking powder - somewhere between one teaspon and one tablespoon, so perhaps half a tablespoon; and
  • use less cinnamon - perhaps one teaspon (instead of two); and
  • consider adding some vanilla essence.
